TUESDAY OF THE FOURTH WEEK OF EASTER




Today, I am doing something different.


Today, I'm going to tell you about the perfect Margarita. Now, before you tell me, "this is not the blog I signed up for, sister." Hear me out for just a wee bit.


Living an authentic Catholic life is about living. Living in this world. To live an authentic Catholic life in this world, we need balance. Being a good disciple is not about burying our heads in the Bible, praying the rosary all day, and never uttering a curse word. Nope, that is not how I see it all. The Lord created this world for us to enjoy. I tell people all the time that my first sip of coffee is God's "Good morning!" to me. There is a critical distinction in the old saying: in the world, but not of the world.


When Cris and I finish the workday, we sit down together with a drink. When the winter finally gives way, a summery Margarita is the perfect choice. Sometimes we have lots to catch up on, mostly me, Cris isn't a big talker! Sometimes we sit in our chairs and look out on the Tetons in silence. Blessed by time with one another, blessed by God's creation around us and blessed with a perfect Margarita. Cheers.


SB'S PERFECT MARG

1.5 oz (a jigger) homemade jalapeno tequila (see recipe below)

1.0 oz Cointreau

.5 oz lime juice

.5 oz Rose's Sweetened Lime Juice


Place a large ice cube in a glass with a salted rim. Add tequila, Cointreau, and lime juices. Stir and enjoy.


HOMEMADE JALAPENO TEQUILA

1 (750 ml) bottle of tequila (chose one you already like to drink, and for heavens-sake do not buy the cheapest bottle)

1-2 fresh jalapenos


Slice your jalapenos into rounds, leaving the seeds. The thinner the slices, the more the oils from the pepper can infuse into the tequila (think spicer!) Add the peppers to the tequila. Allow to sit for 24-48, depending on your desire for spiciness. Test a small sip at 24 hours. Once the tequila reaches your desired spice level, strain the tequila into another vessel. Be sure to strain out the peppers and all seeds. Store tequila as you would normally.
